【麻辣生炒鸡】

1.首先,我们准备新鲜的嫩鸡一只,去除鸡 *** 和鸡脚趾,再改刀成均匀小块放入盆中,多次清洗浸泡,洗干净血水以后准备腌制。

加入食盐2克,胡椒粉2克,料酒10克去腥,小葱一根切成段,生姜一块切成片,和鸡块放在一起,用手抓拌均匀,腌制20分钟,使鸡块入味。

2.准备生姜一块,切成姜片,大蒜几粒切成丁,葱白一段,切成马蹄片,放在同一个盆中,加入花椒一把,干辣椒一小把备用。

3.接着,我们准备配料,青椒一个切成滚刀块,红椒半个切成三角块,青红椒能为菜品增色,再准备糟辣椒50克备用。

4.食材全部准备好以后,我们把鸡块炸一下,锅内烧油,把鸡块倒入笊篱中控干料汁,避免炸的时候溅油,油温五成热时,油面接近冒烟倒入鸡块,轻轻晃动炒锅,并用勺子推动鸡块,让鸡块均匀受热,防止其粘在锅底,保持小火炸2分钟左右,把鸡块中的水分炸干,鸡块炸香,鸡皮微焦时倒出控油。

5.锅内留底油,油烧热以后,倒入葱姜等小料,开中火爆出香辣味,倒入准备好的糟辣椒,把糟辣椒炒散炒香,然后把炸好的鸡块倒入锅中,淋入料酒10克,生抽10克,翻炒均匀料酒遇热挥发能够带走腥味。

6.从锅边淋入少许清水,转大火把水分收干,大约翻炒3分钟,汤汁收浓以后,加入白糖少许提鲜,鸡粉2克,翻炒均匀,倒入切好的青红椒,把青红椒炒断生,再淋入辣椒红油20克,颠锅翻炒均匀后即可出锅装盘。

技术要点:

1.嫩鸡没有焯水,剁成小块以后,一定要多次的浸泡冲洗,洗去血水,才能进行腌制。

2.炸鸡块的时候,一定要控干料汁,避免油料飞溅。

3.倒入糟辣椒以后,一定把糟辣椒炒散炒香,才能放入鸡块。

  今天我跟您介绍一道懒人版家常盐水鸡做法,鸡皮爽脆,鸡肉咸香可口,一起来看看是怎么做的吧!

  用料:

  草鸡,生姜,小葱,花椒,白酒,盐,水。

  做法:

  我比较喜欢吃草鸡,因其肉质比较紧实、有嚼劲,比三黄鸡这类的肉鸡吃起来更香些。

  把鸡肚子里面的内脏清洗干净,在鸡脚拐下面一点的部分,斩掉鸡脚,这样鸡腿煮好就不会破皮。

  生姜切片,小葱切小段。

  空锅加热,倒入盐和花椒翻炒,炒到花椒出香味,盐微微发黄,即可关火。

  等盐稍微晾凉后,将盐抹在鸡子上面,把鸡肚子里面和鸡皮的每个部位都要抹到。

  用保鲜袋装起抹好盐的鸡子,放置冰箱,冷藏4小时以上。

  取出冷藏好的鸡,锅内烧一锅开水,一手拎着鸡脖子,一手拿勺子,把锅里的热水舀浇在鸡皮表面。

  全部淋过热水后,鸡皮会稍微收紧一些。然后将整只鸡仔都放进去烫一下。

  烫上20秒钟的样子捞出,再放入冰水中冰镇一下。

  把切好的生姜和小葱放入锅内,加少许白酒,捞出冰水里面浸泡的鸡子,放入锅内,用中火煮鸡子,煮上15分钟。(如果鸡子上面的盐够多,就不需要再加盐了。如果盐不是很多,可以适量地加些盐。)

  时间到后关火,盖上锅盖焖制,把鸡子焖上半小时,用筷子往肉厚的地方扎一下,没有血水往外流就可以了。

  取出,剁成小块装盘,一道简单家常版的盐水鸡就做好了,这样做出来的鸡肉特别香,快收藏,做起来吧!
