怎么做出好看又好吃的“花卷”? *** 简单易学大家好是阿雅小厨,今天和大家分享花卷的做法。
首先是和面,做花卷的面不能和的太软了,太软了造型容易塌,面一定要醒发完全。
面发好后首先是排气,把面团里面的空气全部排出来,蒸出来的无论是馒头还是花卷表面都是特别光滑的,而且里面的气孔都是特别均匀的。
排完气后把面团擀成长方形,均匀的抹上一层食用油,我用的是葱油,在做葱油的时候,小葱切碎后加一点点碱面拌匀,这样葱熟了也不会变黄,能保持小葱本来的嫩绿色。
把面饼叠三折,叠的同时用手按压,把里面的空气排出来。
然后切一个长条一个窄条,窄条摞在宽条的上面。
用筷子在中间压一下,然后把面翻过来
筷子放在中间,捏住两头。

然后用手扶着,立着把它压下去,注意不能压断了
再把筷子抽出来

花卷全部做好后需要二次醒发15分钟,15分钟后,冷水下锅,水开后转中火,蒸15分钟后关火,再继续闷五分钟后出锅,这样做出来的馒头或者花卷包子都不会出现死皮塌陷。
