所谓“一年之计在于春,一天之计在于晨”,美好的一天从早晨开始,早餐吃好了,一整天心情都美美哒。
很多人真的可以形容是肉食动物,无肉不欢,顿顿都想吃点带荤的,包括早餐也不喜欢特别寡淡,那么今天要分享的这道美食毫不夸张的可以说是这类人的福音,那就是韭菜肉盒。有肉有菜也有饼,营养全面呐。相信很多人都曾尝试过菜盒子,是不是也有出现过出水或者是漏馅儿的情况呢,那么,接下来我们一起来了解一下到底怎么做才能使韭菜盒子金黄酥脆、皮薄馅多,层层都有菜且不漏馅儿。
食材:
面粉适量、五花肉馅适量、韭菜适量、食盐、鸡粉、十三香、蚝油、生抽、白糖、香油、植物油。
详细步骤:
之一步:和面
首先面粉取150克,其中,用三分之一的面,用开水烫面,烫面做出的饼更加柔软,剩余的面用清水和面,边倒边搅拌,搅拌至没有干面粉,下手揉成稍软一些的面团。
第二步:饧面
揉面 *** 两分钟左右,面团揉光滑以后,用盖子盖住,密封饧面15分钟。
第三步:准备馅料
1、准备五花肉馅200克,可以自己剁,也可以自己买现成的肉馅。把韭菜洗干净,把比较硬的韭菜根去除,以免戳破饼皮。把韭菜切碎,和肉馅放在一起,加入香油10克,搅拌均匀,先搅拌韭菜,让韭菜均匀裹上香油,防止其大量出水,然后把韭菜和肉馅掺匀。
2、然后再加入食盐1克,鸡粉2克,十三香1克,蚝油5克增鲜,生抽2克调色,白糖少许提鲜顺着一个方向搅拌至馅料把调料全部吸收即可。
第四步:擀饼皮
饧面15分钟后,在案板上撒上底面,把面团取出,揪成两个大小相同的面剂子,把面剂子摁扁,擀成2毫米厚的长方形的面皮。
第五步:做肉盒生坯
把调好的馅料均匀的平铺在面皮上面,然后把面皮向下折成长条,把开口处压实,一定要使出全力给压紧实了,以免漏馅。肉盒的生坯就做好了,如果生坯太大,可以从中间切开,更方便烙制。
敲黑板:饧好的面团不要 *** ,容易起筋、 *** 延展 *** ,容易出现面片擀开又回缩的现象。
第六步:煎制
1、电饼铛预热3分钟后,均匀淋上植物油,把做好的生坯放入锅中,盖上锅盖、开小火烙3分钟,火不能太大了,以免糊底了。
2、3分钟后,在饼皮上刷一层植物油,锁住饼内部的水分,防止烙糊,这个时候已经差不多了,如果不确定是否可以翻了,可以撬开看看饼的底部有没有变成金 *** ,如果没有就等等再翻,等饼底面变成金 *** 翻过来,然后再盖上锅盖继续烙3分钟,等另一面也也呈金 *** 时即可出锅。
最后,我们把烙好的饼切成均匀小块,这样更便于食用,摆放在盘中就能上桌食用了。外皮金黄酥脆,馅料鲜香滑嫩,咬一口都是菜,吃上一口好满足。
