冷冻的黄鱼

1、自然解冻30分钟。上面的冰已经破裂,用手从腮部往下撕,顺带内脏会被去除,黄鱼稍微解冻的时候更好除去内脏,把去除内脏的黄鱼放清水内清洗3遍,然后把洗净的黄鱼放进笊篱内控水。

2、把控净水的黄鱼倒入盆子内,下面开始码味,大姜拍破放进黄鱼内,然后再加入花椒、拍破的大蒜,大葱拍破从中间破开加进去、再加入盐4克、料酒适量、胡椒粉半勺,用手把黄鱼拌匀,腌制20分钟,让盐充分的腌透黄鱼。

3、20分钟之后把腌制好的黄鱼拣出来,把黄鱼放进盛器内,加入适量的玉米淀粉拌匀,再加入少许的吉士粉,加吉士粉能增加成品的颜色,看着更漂亮,粉芡均匀的粘匀黄鱼即可,粉芡不宜太厚。

4、下面开始炸制,锅上火加油,6成油温,把黄鱼一个个的下锅,下锅的时候要均匀的分开下,防止黄鱼粘连,大概20秒之后在黄鱼外皮定型的时候,用笊篱轻轻的翻动下黄鱼,不让黄鱼粘连。

5、中间要用勺子翻动下黄鱼 .让受热均匀,6-7成油温【210左右】,油炸黄鱼时间是2-3分钟左右,鱼表面气泡非常少,然后用笊篱捞出控油,在笊篱内撒上椒盐和孜然粉【不喜欢孜然的可以不放 】,均匀的摆放在盘子上即可。

1、黄鱼要提前码味,腌制20中以上更入味。

2、拍粉用的吉士粉,非必要添加,没有可以不用。

3、炸制油温要控制好,油温太高会炸胡,油温低了会造成脱粉的情况。
