腊肠又称为香肠,是广东, *** 以及南方各地比较常见的一种食品,以猪肉为主要材料,配上食盐,白糖,酱油等调料 *** 而成。
不喜欢吃肥肉的朋友可以用腊肠来做菜,腊肠吃起来香,口感不油腻,炒好了就没有那种硬硬的感觉。
今天我们就分享一道家常简单的腊肠炒蒜苔,学会这个技巧,腊肠不用久炒也不发硬,蒜苔青脆不变色。
之一步:准备食材
蒜苔一把,去掉尾部的蒜泡,蒜泡吃起来会影响口感。
切成3厘米左右的段,放在盆中加入清水浸泡,放入食盐2克可以使蒜苔更加清脆。
准备腊肠四根放在盘中。
小米椒两根,清洗干净,切成斜刀片。
大葱白一段斜刀切成片,生姜一小片,切成姜片,大蒜几粒切成蒜片 。
第二步:蒸腊肠
下面我们把腊肠上锅蒸一下:锅内烧水,放上蓖子,凉水把腊肠上锅蒸五分钟左右。
蒸到腊肠外皮软化以后 ,我们取出腊肠,小心不要被蒸气烫到手,剥去腊肠的外衣。
然后把腊肠切成斜刀片。
第三步:烹饪
食材准备好以后,我们开始烹饪,锅内烧油,放入葱姜蒜和小米椒翻炒几下后。
倒入蒜苔快速翻炒。
下面我们调一下味 ,加入食盐2克,白糖1克,加入白糖能为菜提鲜。
从锅边淋入料酒3克,料酒能减少腊肠的腥味。倒入生抽3克,提一下鲜味。
翻炒化开调料以后,倒入腊肠,翻炒至蒜苔断生以后。
淋入明油3克提亮一下色泽,翻炒化开明油,就可以起锅装盘了。
