1、花生,原名落花生,是我国产量丰富、食用广泛的一种坚果,又名“长生果”、“泥豆”、“番豆”等
2、 今天刘嫂就来分享一下“自制花生豆腐”做法,喜欢的朋友可以先收藏,有空自己试一下。
3、下面开始介绍所需要的食材:
花生、玉米淀粉、大蒜、小米辣、小葱、蚝油、生抽、食盐、白糖、白醋
4、今天我们用花生来做豆腐,不用石膏不用卤水。先把花生放入漏篮中,倒入清水,把花生清洗干净,要多清洗几遍,然后用流动的清水清洗干净。再把花生的壳剥掉。比好的花生米放入一个漏篮中
5、再倒入清水,把花生米清洗干净。比较讲究的朋友会把花生的花生衣去除,我们准备一个纱布很细密的,所以就不需要去皮了,洗干净以后沥干水分。再准备一个量杯,上面有标志多少多少的,我们准备了300克的花生1200毫升的清水
6、先把剥好的花生放入料理机中,再放入清水,盖上盖子打成花生浆。准备一个大碗,碗中放入纱布,倒入打好的花生浆,然后提起四个角,把花生浆过滤出来,花生的香味好浓,花生浆洁白
7、碗中放入200克的玉米淀粉,加入400克的凉水,搅拌到没有颗粒状,放入一旁备用。准备一个干净的锅子,倒入过滤好的花生浆,大火烧开,煮的时候要边烧边搅拌,防止溢锅。煮开后用小火煮三分钟左右
8、时间到时,把调好的玉米淀粉水倒进去,边倒边搅拌,一开始倒进去这个糊状一点也不光滑,还要不停的搅拌,开小火,搅三分钟左右,面糊会越来越光滑,搅到提起成 *** 状脱落就可以了。碗中垫有耐高温的保鲜膜,把花生面糊倒进去
9、再给它震动一下,震出里面的大气泡,放入一旁 *** 备用。空碗中放入蒜末、小米辣、小葱、蚝油、生抽、盐一勺、白糖一勺、一勺玉米淀粉、放入半小碗凉水,搅拌均匀,再放入白醋,再次搅匀
10、这是花生豆腐就做好了,有保鲜膜垫底,脱模非常方便,倒扣过来,花生豆腐就下来了,再切成块状,花生做的豆腐特别Q弹,也不像黄豆做的容易碎,它的手感有点像吃火锅的鱼豆腐。再把花生豆腐切成厚片,切的时候刀刃上蘸一些水,就不会粘刀
11、热锅倒油,放入花生豆腐,煎至底部金黄再翻一面,煎至两面金黄,再把调好的料汁倒进来,烧两分钟左右,让花生豆腐完全入味,就可以出锅了,看上去就非常的香特别有食欲,再撒上葱花点缀,花生豆腐就做好了
